Meatball Subs with Marinara

Marinara sauce is the nectar of the gods, I’m pretty sure.
I’ve been making my own lately and using it for everything. Risotto, pasta, sandwiches, dipping sauce.
I had some Mega Meatballs, and some fresh homemade bread – and the result was heavenly to behold!  And even better to eat.

I had made some of my bread into flat baguettes the other day, so I sliced one in half and started piling on my toppings.
Meatballs, mozzarella cheese, marinara sauce.
I now have marinara sauce stored in my fridge, ready for the next time I have a craving for it.  Bliss!

  • 1 15 oz can tomato puree
  • 1 cup cherry tomatoes
  • 1/4 cup parmesan cheese
  • italian herbs and spices
  • diced garlic
  • 1 tbsp olive oil
  1. Pour puree into medium saucepan and heat over low heat.
  2. In microwave, heat cherry tomatoes (covered) for 1 minute, until they burst
  3. Add to puree
  4. Add cheese,  herbs, spices and garlic to taste  (I add about a tbsp of an Italian herb mix, and 1/2 tsp diced garlic)
  5. Stir
  6. Once the puree is warm through, add the olive oil and mix well. Remove from heat.
And voila!  Marinara!

Add 1/4 cup crumbled sausage to your cherry tomatoes before you stick them in the microwave. Heat as before, and add to puree.
Trust me – this is delicious.
