Summertime is the best for so many reasons, and one of my personal favourites is the fact the fruit is in season. What fruit? ALL OF IT. Pretty sure every time my sister and I walk into the produce section we are actually entering heaven.
We bought a ton of fruit the other day, and for breakfast this morning we threw together one of our favourites – fresh fruit salad. Perfectly ripe peaches, kiwi, blueberries, strawberries, and some crisp gala apples thrown in for good measure.
Blueberries are the 2 year-old niece’s prime choice, so she ate those (and the strawberries) out of the salad, and left the rest. But I devoured all of it. And then kept eating it all morning, every time I walked through the kitchen.
It’s a fast and simple dish, and is delicious by itself, or as a topping for yogurt or crepes or waffles or granola – depending on what you want for breakfast!
On it’s own – it is Whole30 compliant, but add it to anything you like!
FRESH FRUIT SALAD:
- 1/2 pint blueberries
- 6-10 strawberries
- 1 apple
- 2 peaches
- 2 kiwis
- Pineapple juice (1-2 tbsp)
Cut up the fruit either in slices or cubes. Coat in the pineapple juice. Chill for 20 minutes, and enjoy!
