Chili Lime Chicken Tacos

Whew, September has been busy! It’s already half over, people! That’s just crazy. Where did it GO?!

With school starting again, and the summer coming to a close, I’m sure you’re busy too. If you’re looking for an easy set-it-and-forget-it meal, these slow cooker Chili Lime Chicken Tacos are right up your alley! Just pop some chicken breasts in the cooker in the morning with the spices and at dinner time do some easy taco fixin’s prep and KABLAM! Delicious dinner, all ready to go.
This recipe isn’t overly spicy, since I’m not a huge fan of spicy food, but it’s jam packed with zippy flavour that is good to the very last bite.

beautiful bowl of fresh salsa with tomatoes and peppers that she brought with her. Fresh roma and beefsteak tomatoes and red pepper from the garden with some red onion, cilantro and fresh squeezed lime…there wasn’t a drop left when dinner was over.

Fun Fact: This chicken also makes KILLER nachos. Throw the left over chicken on some corn chips with some cheese and black olives…it’s a thing of beauty, lemmie tell ya.


Serves: 4 Prep: 5-10 min
Cook: In slow cooker, 4 hours on high heat or 8 hours on low heat
  • 2-3 chicken breast
  • 2 Tbsp chili powder
  • Juice of 2 limes
  • Zest of 1 lime
  • 1 tsp Onion powder
  • 1 tsp Garlic powder or 3-4 cloves minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp maple syrup
  • 1 cup water
  1. Combine all ingredients in slow cooker, cover and cook according to cooker’s settings.
  2. Shred, serve, devour.
